
Fall is in the air! I love a healthy bowl to eat for lunch and what better way than to create a yummy Couscous bowl with delicious RiceSelect options mixed with fresh ingredients. I was able to quickly deliver this recipe for the whole family to enjoy!
All of the fall ingredients gave it that extra comfy feeling and smelt amazing in my home! You can add meat or other toppings but this is perfect for a vegetarian lover or if you want a healthier option. Rice Select has the best selection of rice to choose from!

Here is the recipe below:
• 2 cups RiceSelect Pearl Couscous
• 1-2 cups fresh washed kale
• 1 package cut butternut squash
• 1 shallot chopped
• 1 can chickpeas
• 1 cup craisins
• Fresh feta cheese
• Balsamic
• Salt/pepper
Directions:
• Preheat oven to 350 and scatter squash,shallots and chickpeas on a sheet pan drizzled with oil and seasoning. Bake for
10-12 min until golden brown, take out to cool
• In a sauce pan cook RiceSelect Pearl Couscous according to packaging with water.
• Add all ingredients to a bowl and top with fresh feta and balsamic drizzle. Enjoy!
