Ingredients:
- 32 oz chicken broth
- 15 oz can diced tomatoes
- 15 oz can corn
- 15 oz can black beans
- 1 pack of taco seasoning
- 2 jalapeños
- 1 large red bell pepper
- Cilantro
- 2 cups shredded chicken
- Green onions
- 1 onion
- 3 cloves garlic minced
- 1-2 limes
- 1 cup softened cream cheese
- 2 cups Mexican or cheddar cheese
- Avocado and sour cream for toppings
In a medium large pot sauté chopped onion and garlic in oil for 3 min on medium high heat. Add in bell peppers, jalapeño, chicken, corn (drained), black beans and taco seasoning. Mix together and add chicken broth cover and bring to a boil and add in softened cream cheese in slow amounts while mixing in. Squeeze lime in and toss into soup for some extra acid. Sprinkle in cheeses and let sit on low for 20-45 min. Top with your favorite toppings and enjoy!
