
My whole family caught a gnarly stomach bug this past week and I am still in shock that I somehow skipped past it myself. Phew! My husband couldn’t eat much for a couple days but when he finally could I had to make him this delicious and healthy soup to mend the tummy again. It’s filled with lots of umami flavor and tasty vegetables! You can also use more than what I did here, I used what veggies I had on hand but bell pepper or snap peas would be nice too. I used Trader Joe’s vegetarian dumplings but you could also use a meat based dumpling as well if that is something you prefer. I find vegetarian ingredients are best for healing the gut apposed to meat. Now to the recipe! This one is very quick and easy to make.
Ingredients:
• 1 shallot chopped
• 3-4 cloves garlic minced
• 16 oz chicken broth
• 1 bag frozen dumplings
• 2 cups fresh washed mushrooms
• 2 cups whole peeled carrots chopped
• 1/4 cup soy sauce
• 1/3 cup rice wine vinegar
• 1/4 cup sesame oil
• bok choy
Steps:
In a large pot add shallots and garlic in oil on medium high heat. Add in sliced mushrooms and carrots. Add in the soy sauce, vinegar and sesame oil to simmer with the vegetables until almost cooked through. Add in dumplings for 1-2 minutes and pour in chicken broth. Season with salt, pepper and chili flakes. Mix in bok choy and stir occasionally until cooked through for about 30 min. Enjoy!
