
Have you ever had crispy corn cakes? I’ve had some amazing ones at local Mexican restaurants in our area and there is something tasty about the famous Cheesecake Factory ones that inspired me to make my own from home! I used Mi Nina chips to give it that extra crunch and it was so fresh and tasty! They were so fast and easy to whip up in minutes. Definitely going to be making these again. Top with your favorite fresh ingredients and it takes them even more to the next level.
Ingredients:
• 3 cups canned or frozen thawed corn
• 1 stick butter softened
• 1 cup masa corn flour
• 1/2 cup all purpose flour
• tortilla chips
• salt/pepper
• pico de gallo, sour cream, avocado & cilantro for toppings
Recipe:
In a food blender mix half of corn until puree’d. Add to bowl with rest of whole corn pieces. Mix in masa corn flour and all purpose flour along with salt and softened butter. Stir and add in crunched up tortilla chips. Form balls in your hand and add to oiled pan for 6-8 min on each side or until crispy golden brown. Top with sour cream, cilantro, pico de gallo and fresh avocado. Enjoy!
